This is a staple in my house! SO simple and quick.
Above you’ll see all the ingredients. Below are the instructions.
1. Rinse and drain cannellini beans.
2. Pour beans into mixing bowl. Add the chili powder, cumin, garlic powder and salt. Stir.
3. Chop up spinach and cilantro. Add spinach, cilantro, shredded cheese and sour cream to the same bowl as step 2. Stir.
4. Divide the mixture between flour tortillas, fold them close.
5. Cook quesadillas in a skillet over medium heat till tortillas are light brown, little crispy and the filling is melted. *3-5 minutes each side*
6. I like to cut with a pizza cutter and serve with salsa or hot sauce
